Each year, approximately 1.6 million adults in the United States are diagnosed with diabetes. Type 2 diabetes, the most common form, typically strikes adults over age 40 who are overweight and don’t get enough exercise. There is no cure for diabetes but you can live a long, active, healthy life if you take certain steps to manage and control it. Diabetes is a condition in which there is too much glucose, or sugar, in the blood. Therefore, eating healthy and being physically active are very important parts of treating the condition. When you have diabetes, the sugar builds up in your blood because your cells do not remove glucose from your blood in the right way. If you don’t take care of your diabetes, then your sugar will stay high. Over long periods of time, high levels of blood sugar can damage your organ, cause serious feet problem requiring amputation, and make you very sick.

Are you suffering from diabetes, heart disease or some other chronic disease? The “Take Control” program is coming to Person County today. It is a FREE 8 session chronic disease prevention program that provides strategies to help adults manage their health. It informs, empowers, and motivates participants to change their eating and physical activity patterns. The program provides opportunities for participants to track their goals and progress toward healthy eating and physical activity behaviors. Each 1-hour session contains some basic cooking demonstrations and sample of a healthy recipe. The recipes and nutrition handouts are provided to program participants. It will be held on Thursdays, June 23 – August 11, 2022 from 2:00 p.m. – 3:00 p.m. at the Person County Senior Center.

Banana Pineapple Delight – serves 9

¾ cup graham cracker crumbs

2 Tbsp margarine

1 bananas, sliced

4 oz light cream cheese, softened

¾ cup skim milk

1 Tbsp plus 1 tsp sugar-free instant vanilla pudding mix

½ (19oz) can crushed pineapple (packed in juice), well-drained

¼ (8oz) tub frozen fat-free or light whipped topping, thawed

Mix graham cracker crumbs and margarine with a fork or pastry blender until crumbly. Moisten tips of fingers with water and press mixture into the bottom of an 8″x 8″ baking dish. Arrange banana slices evenly over surface of crumb mixture. Using an electric mixer, beat softened cream cheese until smooth. Gradually add milk and continue beating. Add pudding mix and beat for 1 minute or until mixture begins to thicken. Using a rubber spatula, spread mixture evenly over surface of bananas. Spread crushed pineapple evenly over pudding layer. Spread whipped topping evenly over pineapple layer. Cover with plastic wrap and refrigerate for at least one hour or overnight. Serve chilled.
