One-Pan Cod and Asparagus

Cod in a pan over asparagus and tomatoes.

Serves 4


Preheat oven to 400 degrees


Ingredients
  • 1 pound of fresh asparagus, trim off the ends
  • ¼ cup shredded Parmesan cheese
  • 4 cloves of garlic, minced
  • 1 cup of cherry tomatoes
  • salt/pepper to taste
  • 4 pieces of cod
  • 4 tablespoons of olive oil
  • smoked paprika
  • juice of 1/2 lemon

Directions

In a bowl, toss asparagus, tomatoes, parmesan cheese, garlic, salt/pepper. Spread on an oiled sheet pan and bake for 12 minutes. Meanwhile toss cod, olive oil, lemon juice, salt/pepper, and smoked paprika. At 12-minute mark, add the cod to the sheet pan and bake the cod, asparagus and cherry tomatoes for another 12 minutes. Enjoy!
